Equipment

  • Measuring cups and spoons
  • Rubber spatula
  • 9x13 inch cake pan
  • Oven
  • Cooling rack
  • Sifter
  • Whisk
  • Offset spatula or knife for spreading glaze

Ingredients

Cake:

  • 1 cup 2 sticks unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup whole milk

Glaze:

  • 1 cup powdered sugar
  • 2 tbsp milk
  • ½ tsp vanilla extract

Optional: 1 tbsp softened butter or lemon juice

Instructions

  • Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9x13 inch pan.
  • Cream Butter and Sugar: Beat softened butter and sugar until light and fluffy (3-4 mins).
  • Add Eggs and Vanilla: Mix in eggs one at a time, then add vanilla.
  • Combine Dry Ingredients: In a separate bowl, sift flour, baking powder, and salt.
  • Mix Batter: Alternately add dry ingredients and milk to the butter mixture, mixing until just combined.
  • Bake: Pour batter into pan and bake for 30-35 mins or until a toothpick comes out clean. Cool in pan for 10 mins, then transfer to a wire rack to cool completely.
  • Make Glaze: Whisk powdered sugar, milk, and vanilla until smooth. Adjust with more milk or sugar if needed.
  • Glaze Cake: Pour glaze over the cooled cake and spread evenly.

Notes

  • Butter Substitute: If using salted butter, reduce added salt by 1/4 teaspoon to balance flavors.
  • Gluten-Free Option: Substitute all-purpose flour with a 1:1 gluten-free baking flour blend; make sure your baking powder is gluten-free.
  • Milk Alternatives: You can use 2%, skim, or non-dairy milk (almond, soy) as a substitute, but note it may slightly alter the texture.
  • Make Ahead: Bake the cake in advance, store in an airtight container, and reheat gently in the microwave or oven before serving.
  • Enhancing Toppings: Customize with powdered sugar, whipped cream, fresh berries, or caramel/chocolate drizzle to elevate the dessert.
