For Sopapillas:

- 1.5 tsp baking powder
- 1/2 tsp salt
- 1.5 cups warm water
- Vegetable oil for frying

- 1.5 cups chopped pineapple or other favorite fruits
- Tamarind pulp optional
For Chocolate Drizzle (Optional):

Make Dough: In a mixing bowl, combine flour, baking powder, and salt. Add warm water and mix to form a smooth dough. Cover and let rest for 10 minutes.
Shape Sopapillas: Divide dough into golf-ball-sized balls. Roll each into thin ovals, about 1/8 inch thick, and cut into squares.
Fry: Heat oil in a large pot to 350°F (175°C). Fry sopapillas 1-2 minutes per side until golden. Drain on paper towels.
Prepare Ice Cream: Soften ice cream at room temp and mix with chopped pineapple. Freeze again to firm up.
Make Drizzle: In a microwave-safe bowl, melt chocolate, butter, and oil in 20-second intervals, stirring until smooth.
Serve: Place sopapillas on a plate, top with a scoop of ice cream, and drizzle with chocolate. Enjoy!
