Ingredients
  

For Sopapillas:

  • 3 cups all-purpose flour
  • 1.5 tsp baking powder
  • 1/2 tsp salt
  • 1.5 cups warm water
  • Vegetable oil for frying

For The Ice Cream:

  • 3 cups vanilla ice cream
  • 1.5 cups chopped pineapple or other favorite fruits
  • Tamarind pulp optional

For Chocolate Drizzle (Optional):

  • 1.5 cups chocolate chips or chopped chocolate
  • 1.5 tbsp butter
  • 1.5 tbsp vegetable oil

Instructions
 

  • Make Dough: In a mixing bowl, combine flour, baking powder, and salt. Add warm water and mix to form a smooth dough. Cover and let rest for 10 minutes.
  • Shape Sopapillas: Divide dough into golf-ball-sized balls. Roll each into thin ovals, about 1/8 inch thick, and cut into squares.
  • Fry: Heat oil in a large pot to 350°F (175°C). Fry sopapillas 1-2 minutes per side until golden. Drain on paper towels.
  • Prepare Ice Cream: Soften ice cream at room temp and mix with chopped pineapple. Freeze again to firm up.
  • Make Drizzle: In a microwave-safe bowl, melt chocolate, butter, and oil in 20-second intervals, stirring until smooth.
  • Serve: Place sopapillas on a plate, top with a scoop of ice cream, and drizzle with chocolate. Enjoy!

Notes

  • Thin Dough: For best results, roll dough to about 1/8 inch thickness for crispy sopapillas.
  • Serve Immediately: Sopapillas taste best when served warm; keep them in a 200°F (95°C) oven to stay warm until serving.
  • Drizzle Variety: Substitute chocolate with caramel or honey for a different flavor profile.
  • Reheating: Use an oven to reheat leftovers for optimal crispiness.
